1,000 Vegan Recipes – Appetizers
Today I will review and share with you the process of making two appetizer recipes from 1,000 Vegan Recipes. As you might have read in the first blog post about the book I am doing a review of the book section by section.
First I made the Tortillas Chips from page 5.

Everything I need:
With the olive oil before I spread it:
A pizza wheel worked great to cut the tortilla into the eight pieces:
I loved the way these turned out, really yummy and crispy.
Me being be, I did double the recipe. More is better!
Then I made the Lemony Edamame Dip from page 14.
Now I didn’t have any garnish. Nor did I have any peas so I replaced them with french cut green beans. Also no green onions like the recipe calls for so I added extra garlic. A great part of vegan cooking is improvising and putting your unique spin on recipes!
Not an exact duplicate of the recipe but pretty close. Again I made a double batch.

It isn’t totally my taste but it is good. I love edamame and all the other ingredients, might be a bit too garlicky for my taste.
And of course I had to put them together! Here are the Tortilla Chips and the Lemony Edamame Dip together! We took them to the park and ate them for dinner.
