Today I will review and share with you the process of making a salad from 1,000 Vegan Recipes. As you might have read in the first blog post about the book I am doing a review of the book section by section.

The salad I picked is the Spinach Salad with Orange-Dijon Dressing from page 55.

Now I didn’t blend the ingredients like I the directions said. I replaced the agave nectar with Xylitol. And I couldn’t find any green onions at the store so I skipped putting onion in the dressing since there was already onion in the salad.

Here is the completed salad, beautriful isn’t it?

 

 

 

 

 

 

 

It was absolutely delicious! Way too much on the onions for my taste though, even with out the green onion in the dressing. I picked out half half of the onions and that helped. Really good though I liked it.
