Today I will review and share with you the process of making an open face sandwich from 1,000 Vegan Recipes. As you might have read in the first blog post about the book I am doing a review of the book section by section.

Today I am reviewing a recipe from the Sandwiches, Pizza, and More, the Creamy, Crunchy Fruit-and-Nut Sandwich on page 111.

The picture shows Xylitol which I was going to use in place of the agave nectar the recipe calls for. But then I decided to omit added sweetener. I don’t like things that are really sweet and with the cranberries and pears I thought that would be enough. Here is the almond butter, pecans, and dried cranberries:

It was absolutely delicious! Really filling, and just the perfect amount of sweetness for me, glad I left out the added sweetener.

    I have never been able to like tofu either, and after lnnreiag more about nutrition I feel no need to force myself to like it. Soy has a sugar that we can’t digest, which is why it gives us gas, and manufactured tofu has been processed to take out all of the fiber as well as a lot of the vitamins and minerals.Tempeh is a fermented product, so that the sugar has been broken down, and it uses the whole bean fiber all and tastes SO much better! ask around or maybe order online?
