Today I will review and share with you the process of making Broccoli Noodle Soup from 1,000 Vegan Recipes. As you might have read in the first blog post about the book I am doing a review of the book section by section.

Today I am reviewing a recipe from the Soups on page 146.

 

 

 

 

 

 

 

Here is everything that I need. Of course I ended up making some substitutes. I didn’t have any garlic so I substituted with Cajun seasoning, and whenever a recipe calls for vegetable broth, I often substitute with Bragg’s Liquid Aminos and water.

This recipe was pretty good; I am a fan of pasta. The thing with this is you do have to eat it immediately because otherwise the noodles soak up all of the liquid and get soggy. I don’t think I would make it again, but it was good.
