Vegan Carrot CakeI have never had carrot cake! In fact I don’t know if I ever will.

One, it seems a little weird to me, you don’t make cakes out of carrots right?

Who knows… I am probably missing out on something delicious just because of my own sensitivities.

Growing up as a vegan, well being a vegan in general I suppose, you just notice being different more when you are a kid.

Being vegan often brought the question, “Do you eat carrot cake?” As if that is the only cake a vegan can have… one made of carrots.

I have this general prejudice against other foods too. Like zucchini, another food non-vegans seem to assume vegans eat mass quantities of.

Again, I know I am missing out. Some people love zucchini but I just can’t get past the stereotype I associate with it.

I suppose never say never- I just put some zucchini in a mix of vegetables to stuff some burritos with the other day. And I do happen to LOVE carrot juice.

So I guess I am eating them, but they have all the other veggies around them to disguise them. (Shh…please don’t tell ;)

I hope that you can eat without being bothered by stereotypes that  just really don’t matter.

I haven’t tried it myself, but maybe someday I will. Any day is a good day to turn over a new leaf, so long as it is a good leaf.

    Carrot cake is extremely popular in Australia and zucchinni to a lesser extent.I have not made a vegan one though. We dont have pumpkin pie here though, we use our pumpkins to roast or mash, used in savoury dishes… a bit off topic but thought you might be interested!

      That is interesting!! That definitely makes sense to use pumpkins in savory dishes– being a squash. I imagine that’s delicious!

    I think carrot cake is one of THE best cakes EVER, it was my favourite cake even before I was vegan, it’s sweet has the crunch of the walnuts and the cream cheese icing (which is easy to make vegan) is to die for, You HAVE to try it

    I should probably do a couple zucchini recipes, but I feel about as enthusiastic toward it as you seem to. Carrot cake on the other hand- I’ll publicly vouch for that one. I’ve had someone else’s zucchini bread and it was quite good. Really do love my banana bread though, and carrot cake is 10x better than banana bread. Yum.
